Paint roughness into some parts, paint displacement into others. With painter you can add fingerprints and dirt to the handle, edge wear on the metal and the blade, tiny scratches. Usually if you're texturing you'd create a material and assign it to parts of the model, if you create a Knife you'd put wood on the handle and metal on the blade and that's it. Its really what it says, instead of just grabbing materials and placing them on polygons you paint on the model to give it a more intricate look. You can see painter as a way to texture your designs with greater depth and detail, taking single models to the next level as far as texturing goes.
